May Slow Session: Apis & Pizzeria Sorellina

Event Description

This winter, chefs Taylor Hall and Adam Brick launched Pizzeria Sorellina in Spicewood. True to the sustainable foundation they laid with Apis (the fine dining concept adjacent to Sorellina), Taylor and Brick have developed a virtually zero-waste, vertically integrated food system by partnering with local farmers and ranchers.

In this very special Slow Session, Brick will lead participants on a tour of the apiary and garden, then see the animals raised on-site (pigs and chickens). Inside the pizzeria, James Brown (of Barton Springs Mill) will talk to the group about how they are working with the restaurant to grow their own wheat, and Brick will explain how they make all their salumi from wild boar. The presentation will be followed by a hands-on pizza-making demo — and a sampling of the fruits of your labor! 

Please note that Apis/Sorellina is a 20-25 minute drive from downtown Austin. We are anticipating this to be a very popular event, so please only reserve a ticket if you are absolutely sure you will be able to attend!
